The Rev. Joseph Chong, Catholic priest, was listed as a resident of Hong Kong in 1850. He was an ecclesiastic of the Roman Catholic College. The Revs. Chong and Jean Joseph Fenouil were in charge of ministry at the village of Aberdeen in 1850.
[Chong sounds quite Chinese to me, although his name was in a "not-Chinese" list.]
